HSBC-specific format details

HSBC UK statements have a few characteristics that trip up generic converters:

1. Date format (DD MMM YYYY): "03 Jan 2026" is not the same as DD/MM/YYYY or MM/DD/YYYY. Our parser recognizes month abbreviations (Jan, Feb, Mar...) and converts correctly.
